Networking dinner

Organized by Monte Carlo Wine and Business Club, last networking event for 2011. Guests:

Executive Chef of the Hotel de Paris, Franck Cerutti has created a special menu to match the wines:

  • duck foie gras in quince gelee with 2004 Champagne Perrier Jouet Belle Epoque
  • confit of reinettes apples
  • Normandy scallops with black truffle, chicory and salsify with 1998 Champagne Perrier Jouet Belle Epoque
  • roast Bresse pigeon with 2004 Pape Clement Pessac Leognan Rouge and 2006 Pape Clement Pessa Leognan Rouge
  • Monalisa potato puree with salmis sauce
  • Pineapple and lime delice, pineapple sorbet, with Champagne Perrier Jouet Belle Epoque Rose
