Fairmont Hotel's new Horizon

Just in time for the Monaco Grand Prix, the Fairmont Hotel's new rooftop restaurant Horizon opened on 15 May.

The hotel invested 42 million euros in renovating its top floor, including the restaurant, health centre and swimming pool, with its views over the hairpin bend of the F1 circuit. Executive chef Maryan Gandon has developed the Horizon on the 7th floor along both chic and ethical lines. Using fruit and vegetables grown in the hotel's kitchen garden in the Var ensures that products are seasonal and won't need to be transported from afar. In addition, only non-endangered species of fish are featured on the menu. In fact, everything in the restaurant is produced in the most eco-friendly way possible, from cutlery to menu cards, and even staff uniforms.

With a year round service for breakfast, lunch and dinner, and breathtaking views of the sea and coast, we can't wait to try it.
