British chef for Marriott

Brasserie Le Cap in the Marriott Hotel in Cap d'Ail has a new chef. Alan Dann is British, and arrives with an illustrious reputation and impressive CV.

He spent three and a half years with the Roux brothers at the Waterside Inn in Bray. This was followed by five years in France, building up his experience and skills, working with Michel Guerard, Jean-Michel Lorain and Pierre Gagnaire. Another stint in Britain brought Dann recognition in the industry when within six months, Egon Ronay raised his rating from nought to two stars.

So, what sort of cuisine can we expect from the new chef? His menus in Britain relied heavily on seasonal food and local produce. In the past, he's expressed a fondness for ketchup on his chips (frites), and he refuses to eat or cook sprouts, claiming they make him feel sick. So maybe we'll see British favourite fish and chips, but not Christmas turkey and sprouts. We'll just have to wait and see.
