Jean-Claude Brugel, who has spent the past 12 years as head of Monte Carlo Beach Hotel's restaurants is moving. He's taking over the kitchens at the Cafe de Paris, supported by 2nd in command Elio Rossi, who has spent more than 10 years working in the brasserie.
Another hotel chef is the subject of a new book published by Shipley Park Editions, the company set up by Nice Matin's food critic Marc Brunoy. "Maryan Gandon, Gentleman Chef" follows the day to day activities of the head of Fairmont Monte Carlo's kitchens, and includes 20 of his recipes. The book is priced at around 35 euros, perfect for a foodie Christmas gift.
